There were waaaaay too many of them made for me to not see one for sale.
The small form factor of Galaga, Pac and Nintendo cabs made them highly desirable for the early days of 60 in 1's and multicades. Plus, given the recognizable form factor made them easier to sell to the general public.

And for the rare ones that pop up...when did an original Galaga become $2k+ to even be considered?

I think it is because many have been converted.
It's also a game that more or less has done somewhat decently on routes over the long haul and so after so many years they have just been beat up so much and then trashed. I've seen many that way.
Mine had over 208k plays on it when I got it. I personally have not even come across another game that had more than 75k (though I'm sure a lot of you have). Restoration was a lot of work, but worth it for me.
I like to play Galaga, but it is also just as much of a piece of great art sitting there playing through the attract mode.
