When soldering old boards - whats that stuff that comes up?

When soldering old boards - whats that stuff that comes up?

Hi - quick question i hope.

On old boards, when reflowing solder around the joint this dirty (brown) stuff rises around the joint sometimes - is that old flux? What is it?

Sometimes it feels like too much of it rising has a chance of tearing up the trace (therefore i pull back on the heat).
 
It could also be the lacquer coating they put on to prevent oxidation and or the flux. As said before, i wouldn't breathe it.

I always hear the blendtec guy in my head.
"Flux smoke, don't breathe this!"
