I like the idea of Goonies and Ghostbusters, both of those would have lots of fun possibilities.
For me, I'd love to see a "Spinal Tap" or "Rocky Horror Picture Show" pinball. Both come from the same era during the height of pinball, and both have plenty of great music/video that could be incorporated into the game.
Tap could have a little stonehenge on the playfield, and the playfield could be set up like an amphitheater. It could have a score rank of lights that goes to 11, and if you get that high the drummer explodes in a case of spontaneous human combustion. The actors are all still around, and could create funny new sound-bytes specifically for the game (like in the Elvira pins).
The 'Rocky Horror Pinball Show' could be set up like a haunted house, with songs from the show playing whenever certain goals/rooms were triggered. Multiball during the Time Warp!
Surely neither of these will ever happen, but it is fun to imagine...
