What exactly is the original back door material for a ms pac?

It appears to be some sort of 1/2 inch particle board.

I looked at home depot, didn't see anything to match.

Just use plywood. You will be happier as plywood is about 1/2 the weight of the HDF (high density fibreboard) or MDF (medium density fibreboard) that was originally used.

I prefer to use plywood, mostly because it will hold up better on the edges, corners, and routed lip.

If a cabinet was sometimes particle board, sometimes ply, and what components were made of what differed during the production run (Williams cabinets..), I just go with plywood.

For an Atari cabinet, where the bulk of the cabinet is vinyl covered particle board, I kind of hesitate to put a plywood piece in there. But..I'm building an entire replacement Missile Command cabaret cabinet and going with plywood throughout, but covered in the original style vinyl and formica, as originally done. I guess it's a personal choice.

+1 on that. There's a time to be authentic, and then there's a time to be pragmatic. Plywood will hold up much better than MDF. And be lighter.

Pretty sure they would have built them all out of high quality plywood in the past if it was cheaper....

I've always used Plywood as well. It comes in the correct thickness. once you paint it black, and shove it against the wall you'll never know.
