This machine popped up on Craigslist for $200 today. What do you think she was, and should I convert her back or pop a 60-in-1 in there? Looks like the screen is set up for horizontal play.

Or if your a glutton for gaming punishment - keep the current game and just clean it up a little - doesn't look too bad as is all things considered, just adjust that monitor to fill in the whole screen.
 
I would probably leave as is. Its a decent coversion and its a popular enough game that you could resell it easily. Might be difficult finding all the Rally X parts.
 
also, all the pcb I can find for Ghost N' Goblins are non-jamma. Did they only come in this variety?

If the PCB is JAMMA, it's either a bootleg or a Chinese multi with all the other games turned off. The original is Capcom Classic pinout, supposedly the same as Section Z and Trojan, though I could never get my working Section Z board to power up in my dedicated GNG.
 
I would leave that cab as is - The board is worth a good amount of money - the marquee and side-art are the icing on the cake - I don't think you could buy a board + marquee + side-art for near $200. It's an awesome game!
