Have any of you guys wired in two game video/sync signals into one going to the monitor? Are there any issues with doing something like this or is it safe to do so?

Thanks

The first problem I see would be an impedance issue.
You are paralleling two video outputs.
If you want to share one monitor between two video games, build a simple video switcher.
Ground is no big issue, so you only need to switch red, green, blue and composite sync (in most cases), so a 5 or 12 volt, 4 position double throw relay would do the job.
Simply wire the red, green, blue and sync inputs of the monitor to the common terminals of the relay, and one monitor to the NO, the other to the NC. Wire a switch into the 5 volt or 12 volt line feeding the relay and when you flip the switch the video input of the monitor will flip between games.
