Agree on the Paperboy, games like that with unique controllers are good ones to get. But what was the problem with Mame'd Food Fight? What was different about a joystick?
 
You are really missing a lot of "pre-crash" games so there are many choices. Many good examples have already been mentioned. I'd also get rid of either the Pac or Ms. Pac and upgrade the one you keep to play both games. This gives you room for an extra game.

Besides the good suggestions above, I'd also add:

Gorf - multiple levels adds variety
Donkey Kong - classic that everyone will recognize

Since you seem to be into emulation, I agree with Jow and would get something that is really only playable in a dedicated cab.

I'm one step ahead, my Ms. Pac board runs in my Pac-Man cab, so I'm still down to one more game. I also agree on the control issue, games like Spy Hunter can't be played with an 8 way joystick and six buttons. Robotron can if the controls are mapped out right.

Kong is on the 60-in-1 and I'm not a fan. I am glad the King of Kong movie was made, it seems to have added some new members to our hobby.

I played a dedicated Front Line, and got to used the controls. I don't mind it too much on the colecovision with super action controllers, but it doesn't get me.

Tron is my favorite so far. Unique controls, wonderful art, wonderful cab, several games in one help the replay value. I've never seen one in person, but I have played a dedicated Discs of Tron with an add on speech board. I assume the cabs are similar.

I'd add Battlezone to the list. One of the things I like about old games is their unique controls, so perhaps that's something to consider when adding to your collection. I agree with what others have already said, any Williams would be nice, and or Tron, Gorf, Berserk, Q bert, Qix.
 
There is also Red Baron, which I like a lot more than Battlezone. The same friend that I mention also has a sit down Red Baron, excellent game that I play often. So far Tron and Red Baron top the list.
 
Get rid of the Galaga and get a Gyruss. You can play Galaga on the 60-in-1 and it plays exactly the same. Gyruss, on the other hand, needs a Monroe stick and stereo sound...
 
tron top's my list as well BUT none ever come available in my area so that may be an issue for you as well. i know you dont like nintendo cabs but playchoice is freakin awesome!

I already have an NES. I avoided these cabs during the day, I never felt the need to pay-per-play a game I could play at a friend's place.

The big draw on the pc10's back then was the ability to games *before* the release date for home versions. I remember one of them being Mega Man 3....
 
What about Berzerk or Sinistar?

I love berzerk on the 2600, but that's the only version I've ever played (I've never met an arcade cab). My friend has a cockpit Sinistar that I've played very little. I've made it to level 2 once, but it's really hard. 'Beware, I live! Run coward run!' or the great 'run run run!'

Sorry PC-10 owners, this sounded a little mean. I have two systems, one a top loader and the other a boxed SMB3 bundle and about 50 games. Only four are boxed, but I went to the trouble to make replacement boxes/covers for most of the others. I do value the games in the end...
 
space duel. you can mod it to play gravitar and black widow. might make you want to get rid of your asteroids deluxe..

multi williams. If you don't want multi, get a robotron.

If you don't already have one, a good horizontal jamma cab so you can buy boards and drop them into the cabinet..

I remember playing Mario 3 for the first time on the local playchoice...

By the time my podunk town had it, it was probably released on NES cart. But not like myself or anyone had it. Not at $50 a pop and limited availability.

Had to wait till xmas. And with The Wizard hot on my mind... It was tough.

Funny how everyone says this. In my collection, I am pretty sure DK is getting the boot to make room for other games.

There have been many good games mentioned, Marble Madness, Multi WMs, TRON, Battlezone, Here is my addition for you....
