stereo or dual mono?

I'm working on a little side project to project the PF/player and DMD
to a screen (pf) and a tv (for the DMD). I also would like to pipe the audio to a receiver/speakers if possible since sound gets washed out with distance and
ambient noise. Can I just stick the mic next to one speaker (two
speaker mono) or do the games feature true stereo sound with separate
audio channels?

I can't think of a practical way to capture the stereo effect if it's
the latter, except by dangling a microphone front and center of the
speakers and that would distract the player.
 
Depends on the game probably, but as far as the speakers, I know mine are mono. The two speakers are jumpered together, and only two wires ( + and - ) come off the sound board.

Using a mic to pickup the sound will probably just make it sound worse. Instead, head over to radioshack and buy an audio adapter, solder it inline with the speaker connector off your sound board (The wiring from here to your speaker should make it evident if it's stereo or mono, but I suspect mono), then run a 3.5 audio patch cable from there to your receiver.
