Which is a better product? I am looking to buy some side art and a cpo for my punch out and the inkjet is cheaper by about $40- $45. Will I notice the difference?

Usually, yes. A well-done silkscreen is going to be loads nicer looking because the colors are more solid, and the inks used are of a different type that usually end up looking nicer, and may wear better.

It's not possible to say that silk screen is always better than inkjet, because a moron in a hurry can mess up anything, and a really well done inkjet (with modern equipment) can look very nice.

If it's available silkscreened then that's 110% the way to go.

Screen printed art not only looks better, but it is also the way the original art was printed.
