Recently I've been drooling over dual sit down drivers. Graphics are a large consideration too. So far the one's I've been considering are (in order of my preference):

Initial D (someone school me on the different versions, please)
F355 Challenge
Sega Super GT
Rush the Rock Alcatraz
Cruis'n something
Daytona

Honestly, I've only played Initial D ver 2 & 3, F355, Super GT, and Rush Alcatraz (for 10 min), and Cruis'n USA. I wasn't impressed with the graphics on Rush, or Cruis'n. I used to play the hell out of Daytona on my Sega Saturn, but the gameplay was nothing I would want to have in my arcade (is the arcade version different from the Saturn one?)

Sorry for the random questions. Please feel free to answer any of the questions, comment on any of the games, or add games to my list that I missed.

If Rush doesn't impress you... you'll have to go new enough that you'll be competing with operators, which means most machines will be $2000+ PER SEAT. Have fun with that...

Yeah it wont be cheap for some of those titles, f355 challenge is still a popular machine, ops still run em. But the gameplay will be awesome too.

cruzins are nice, but the gameplay has no real feel to it, its ike driving with a steering wheel shaped controller.

If you want a real feel driving game, it sounds crazy, but check out a hard drivin or race drivin. THe graphics are the first of thier kind basically, but they REALLY took the time to make the game feel as if you were driving a real car. IIRC they hired a race car driver to help them make sure the feeling was right.

from brakes that vary with brake pedal pressure, proper real feel force feedback, and the cockpits have a cool seat with an electromagnet to lock it in, and a real feeling shifter.

From your list, I'd go with Super GT since you said graphics are important. The arcade version of Daytona has a way smoother frame rate than the Saturn version, so you feel like you're flying down the track. Some people like F355, and the deluxe cabinet is a thing of beauty, but I find it pretty boring actually.

I have a Sega Super GT and California Speed and I like them both. I'm looking for a 2nd Cali Speed and almost picked one up about a month ago. If I could only keep one, it would be the Sega Super GT, it's a lot more fun for head to head racing which is where the fun really lies with these.

I'm not sure I made this clear, but I want them to be twin link-able sitdown drivers. I don't think hard/race driving are link-able, are they?

Need For Speed Underground is my favorite arcade racer.

Need for Speed GT came out a couple of years earlier and looks great, but I've never played that one. KLOV entry says, "Game engine is based on NFS6: Hot Pursuit 2 (although there is no actual "hot pursuit" mode in the arcade version at this time - only racing)." That part's a bummer, because linked hot pursuit would be awesome for arcade parties.

Race Drivin's are if you have the link kit in each.
LTG :)

We have two linked Exoticas, and they get a lot of play. They are fun with one player, but great linked up with two.

I think the graphics and gameplay are the best of all the Cruis'n series.

Daytona USA

I have twin daytonas that I got a month or two ago. The racing is very cool. The force feedback in the wheel is very convincing. They get tons of play in the garage. I rarely go to play without putting at least one game on there. The easy track is fun for competition with casual players but trying to win against the computer is challenging. I thought I might get bored with only three tracks, but it has kept my attention. The sounds are great. I didn't realize that it has subs until I had to do some work on the board connection and had to lift the seats. The pedals have a good, realistic feel. I feel like the graphics have held up very well. Obviously, the graphics on my xbox360 are better, but the controls and sounds make daytona a cool experience. The nice thing is they seem to go cheap because they take up so much room and are a hassle to move. For an extended challenge, you can increase the laps and make each race last a good long time. I don't think anyone would be disappointed with a set of daytonas.

I can only speak of the drivers I have, but Rush, Road Burners and Hydro Thunder are real popular in my arcade. Rush and Road Burners are linkable, with Road Burners being the motorcycle version of Rush the Rock, also made by Atari.

All 3 of those games will run $600 on average, far better than the $2000 for newer titles.

I would go with Initial D Stage 4 or higher, then you don't have to deal with GDROM drives going bad. Also it is just better.

I really love Daytona too, and I am sure it is a hell of a lot cheaper.

You should also conisder Lucky and Wild, while it isn't a linked game, it is 2 player co-op with player one driving the car and shooting, and player 2 shooting. It is crazy fun:

Edit:
Also I don't see the appeal of Rush so much, it is just so generic, there are so many other racing games I would get before I would get any Rush.

race drivin's are linkable. Not the best graphics with today's standards, but by far the most realistic i've played. Not that i've play anything super recent, the latest i think i've played was a Fast and Furious.

Out Run 2 is awesome! Graphics are very nice, gameplay is fun, and they're linkable.

He mentions F355 which is pretty much a ferrari simulator, a more current race driving

it all depends on how much money you have to spend..

Linked pair is better than 2 different games..

If you can spend:
$250 a seat:race drivin
$500 a seat: rush the rock, crusin or crusin world
$750 a seat: hydro thunder, crusin exotica
$1k+ a seat: rush 2049, daytona, inital d, ect.

atari games have the best forced feedback system. I would go with rush 2049 SE..

BASED on NFS:HP2? It IS NFS:HP2. It uses the same tracks and everything. Excited to try it when I found it in a hotel game room. I was significantly less excited to learn that the operator didn't set it for first place gets a free credit :/

Thanks for the input guys, I had completely forgotten NFS made fill sized games. I'll ad those to my list.

Ideally I'd like to spend ~$1.5k, but obviously less is better. What makes me drawn to Initial D is the card reader. I like the idea that you continue your game through different play sessions. Are there any other games with a similar feature?
