Replacing a Trackball with A Joystick and other ??

I recently bought a cabinet that was originally (probably) Vanguard, converted to Pound for Pound which has 2 - 3" trackballs in the metal CP. I want to use this cabinet for a 60in1. I know that I can fill the button holes and drill new ones. I read plenty of posts talking about using JB weld and a sheet of steel and Bondo. I also am pretty sure that I'll need a "Red Board" to run the trackball on the 60in1 card. Can you use a 3" TB with new Red Card or do I need a new 2 1/4" TB?

I'm guessing that since operators swapped games so often, there must be an easier method to replacing the trackball with a joystick than the method I described above to fill the holes. Is there? If not, it seems like a lot of work to get this CP back to a managable state.
