I am not able to determine how the buttons are mounted to the control panel. I need to remove so I can put on a new CPO. Is there a doc somewhere I can reference?
The cone itself unscrews from the top. There is a tab to prevent the switch from turning, so you need to get a good grip on the cone and turn it counterclockwise.
The switch unscrews from the bottom of the cone. The cone is keyed, so that it doesn't come unscrewed from the top. Remove the wires and unscrew the switch from the bottom.

One additional question about these cone buttons: there are four wires attached - are two of them used to light the buttons? If so, can I hook these up to my computer power supply (I'm MAME'ing the cabinet) as I would with coin door lights?
No... the LED's in them run at 2.5v from my recollection. You can use your PC's 5v line and put a resistor in line... others here are more qualified to give you specifics.
