Recommendation who to buy an "arcade" style joystick from?

I don't know the ins and outs of mame and that stuff but I'm sure the best thing to do is get a real arcade joystick and interface it with your cab.
The details are up to you.

or swap control panels with different controls on them.

.

I've used paradisearcade a lot of joysticks and joystick parts. The hard part is just knowing what you want in a joystick.

This is a coin operated equipment Collector's website.
It sounds like you should be asking this question on a Gamers website.

Our standard answer will usually be, "Stick an OEM Wico or Monroe joystick in the control panel."
Or at the very least, ask in the Console, handheld, PC section

Why even reply? I don't have a cabinet, nor a control panel. It's a joystick sitting on a desk. I also said I didn't want to build anything.

Anyway, I'll just browse Etsy and find a shop with good reviews who can hopefully add the items I need.
Come on man, this is a rude as hell response to someone just trying to help. Immediately jumping the gun after one reply and going "I'll just look on Etsy" is so ironic- why even post this thread if you already had a plan in mind? You could've just looked on Etsy in the first place.

My first foray into the arcade world was by connecting a Ms. Pac control panel to a USB encoder. Nothing beats the original leaf spring joystick. This would require some building but not too much really.
