Does anyone know if with the right connections, if this power supply could be used with a Nintendo arcade?

Maybe... it depends on which game you're talking about. Donkey Kong needs a fair amount of current on the -5v line, and most modern switching power supplies don't have enough. That said, I've seen some Donkey Kong boards that work fine with a switcher, and others that don't.
Also, that's not really an arcade type supply - it's a computer supply with different connectors for use in some poker machines and newer games. It's going to be a pain to mount. If you're going to go cutting and changing connectors and building mounting brackets anyway, you might as well just use a computer power supply, which are readily available for free.
What is wrong with your existing power supply? Is it missing, or just broken? Usually for Nintendo games it's best to simply repair the original supply.
Now, if you're talking about a later game, like a PlayChoice, then it probably doesn't matter, I don't think they need much on the -5v, same with Popeye, which only needs +5v and nothing else. Other Nintendo games may vary, but Donkey Kong is the one I know that has a hard time with *some* power supplies due to it's -5v requirements.. But if you're going to buy one, I'd get an arcade supply, with screw terminals and mounting brackets.
Also, if you put a modern supply in there, the coin counter isn't going to work, since it needs 24v.
