Plywood VS Particleboard

Melamine would be awesome. You wouldn't have to prime anything if you were going to use vinyl. However, it would take a lot of light colored primer if you were going to paint anything light colored.
 
Not sure if this will be of any help to you guys but I do sales for a large plywood corporation here in Canada and we recently started carrying plywood with black melamine or both sides and with raw MDF on both sides as well. This is a happy medium to what your guys are after. I'm also sure it's available in the US as the manufacturer is PLUM CREEK. Product is called Ultra Core for those interested.

I've heard it referred to as CombiCore and Duramine. I think the latter is a brand name. I used this in my cabinets and it is yummy!

The plywood core MDF stuff is H-E-A-V-Y!!! If a normal sheet of .75 MDF is 80lb, this stuff is closer to 125lb.

Great stuff though. You'll go through more than a few sawblades though is you are doing anything with a jigsaw. There's a LOT of glue in there.
