Pedal extensions for driving games?

Hi all,
I'd like to install a pedal extensions on the gas pedals of my 2 SF Rush the Rocks so young kids (3-5 years old, approximately 36-42 inches tall) can reach the gas pedal while sitting in the seat.

Ideally the pedal extension would be realitively easily removable so I can convert the game back once it's time for the adults to play. Also, I'm just concerned about an extension for the gas pedal, as brakes really are not all that important in SF Rush (especially for a young kid that would probably not use it anyway).

I considered just wiring up a switch that would keep the gas pedal fully pegged, but that doesn't work as it messes up the game during the selection screen. That being the case I think my only option will be to do a manual setup where the child is actually pushing on some kind of an extension that bolts to the gas pedal.

Has anyone rigged anything up like this? If not, has anyone seen anything for a real car that could be MacGyvered to fit?
 
From watching The Temple of Doom, it appears that ShortRound simply tied some little wooden boxes to his feet. lol.

They sell real ones but they are expensive. If you look at the design though they are pretty simple. You could probably find the parts to make something real close to their design at home depot. The main part you will need to find would be a metal plate with a threaded post attached to it. Other than that you just need a backing and some bolts to tighten down to hold in place. Add a block of wood or whatever on the end of the metal post to make a pedal.
