I understand bootleg boards are frowned upon on this site, however I am trying to determine a fair price for a pretty rare and fully functional operation wolf bootleg board. I have wiring diagram and pinout for the game. Debating if I should keep it and create a custom harness to use with my real operation wolf should the board decide to quit, which is typical or sell it off.

To me, the only question would be this:

How quickly can you replace or repair your original board?

I don't think a lot of people work on these and are fairly rare to replace.

If it were me, I'd make the custom adapter/harness and keep it. If your original goes down, the downtime will be minimal.

I haven't actually played the game yet. Gun needs work and re-wiring before I can test it and compare. The demo screens are definitely the same as the original and so are the sounds.

That's a very valid point. At the moment I can get the original board repaired, but down the road, probably not. I think your advice is good in keeping the board and creating a harness to adapt it to the original cabinet. One thing is certain, the bootleg's cabinet wiring is near no where complicated like the original cabinet. Power supply, board, monitor and 1 Connector for the gun / coin door. No silly aux, filter boards, etc. Should be simple to create the custom harness I would think.
