Dont worry about it. You already said that he was going to remove the head and base so that it will fit in your van. The control panel should probably be taken off as well, which is not hard to do. Once the head and control panel is off the Super Sprint base should easily be able to fit through a 36" door way, sideways. The base is wide but it is not that deep. Both the head and control panel each come off and reinstall pretty easily. It actually makes moving a Super Sprint anywhere pretty EASY once you break it down into 3 or 4 peices.
Just be careful of manhandling the head. Atari could have done a better job reinforcing the heads side panels and Ive seen more than one Super Sprint that has had a side panel(where the art is on the side of the head) ripped off when someone was trying to jerk the game around moving it and grabbing onto the side panels. Since it sounds like the head is already going to be removed then this shouldnt be a problem. Just dont try and carry the head by yourself by turning the head on its side and by gripping onto the side panel or you may be in for a surprise.

. If you are going to carry the head by yourself then cradling it from the bottom is what you want to do. Using two people cradling it from the bottom on each side is your best solution here.
Now, as far as what it needs to get running 100%, you will probably need to replace at least the pots in the pedals and the plastic bearings in the wheels at a minimum. Most Super Sprints have been beat to death and these items are almost always on their last legs. Bad or well worn pots can cause a lot of problems, such as one car running faster or the always beloved accelerating into a corner when you lift off of the gas. A worn out pot sometimes causes the throttle to stick going into corners, especially when you lift off of the gas extremely quick such as what happens when you are in the midst of a heated race. This can be especially irritating when your car blows up, as it usually takes the chopper what seems like forever to bring you a replacement car. Thankfully, Atari made choosing a faster chopper a option in Championship Sprint. That is basically picked in Championship Sprint once your car is maxed out, or anytime if you choose.
Using Championship Sprint boards is a cool mod for a Super Sprint cab. Ive always hated playing Championship Sprint in its so called dedicated cab. Its the same cab that Paperboy uses and it has always been cramped to play on. It also is irritating as the right player has to pretty muchuse his or her left foot for the throttle. This can make for a unsettling experience. I almost liken it to a right handed person trying to write left handed.
The point is that once you get tired of the tracks on Super Sprint then you can easily swap in some Championship Sprint boards for more tracks. Its basically the same game except only two players can play at once, you can choose a faster chopper and you also get a extra wrench for setting the fastest lap. The fastest lap wrench is cool because it increases the competition.
What I always do is that once Ive swapped in the Championship Sprint boards I will take the steering wheel connector and pedal connector from the red car and move it over to the yellow cars wheel and pedal. This way when you play Championship Sprint in a Super Sprint you are not cramped right up against the blue player. Moving these connectors around is easy and you dont even have to make any harness extensions or anything. you may have to unscrew one or two plastic clip loops that hold the harness to the cab in places but that is all. All of this swapping of the harness and boards takes all of about 10 minutes at the most. So now you can enjoy a game a Championship Sprint as it should have been enjoyed originally, with some elbow room and with the red player comfortably using his right foot.
Back to the game parts that you are probably going to need to get the game running a true 100% and not just barely functioning. Stephen Beall has a nice selection of NOS or new reproduction parts for sale on his site:

When it came to getting my brothers Super Sprint back to factory fresh 100% working order we found that replacing the foot pedal links and the top pedal plates was necessary as well. Like I said before most Super Sprints are beat to death and the pedal parts have especially taken a lot of use and misuse as people like to stomp the pedals. The foot pedal links have a pin on them that gets worn out and thin. Also the top pedal plates have a channel that these pins ride in. The channel gets wallered out and coupled with the foot pedal links actuation pin getting worn out and thin this can cause a lot of slop. This slop also adds to the problem of unintended stuck throttles when you lift off the gas as it can cause the pots to go past their normal range.
Once you go through and "shop" the game out mechanically you should never ever have to replace these parts again under normal home use. Ive always found that proper controls are extremely important especially in a highly competitive game like Super Sprint or Championship Sprint. Its never more irritating than having to fight or deal with a marginally operating joystick or controller on a game.
So, if this were my game I would go through the pedals and replace all the pots, all of the foot pedal links and possibly all of the top pedal plates. One or two of the top pedal plates might be reusable. You will just have to examine each one and determine if they are wallered out or not. You are probably going to have to replace most of the plastic bushings in the wheels to get them to spin properly, especially the large top bushing. I cant count the number of those types of wheels I pulled apart and the top bushing is especially damaged.
Oh yeah, almost forgot. One cool mod for original Super Sprint cabs is to replace the Steering wheel shaft(or what Stephens site calls the steering wheel insert) with a metal one. I think all Super Sprints originally shipped with plastic steering wheel inserts. Most of the time these ended up getting cracked or warped. The Atari replacement service items were made of metal. What using the metal over the plastic does is that it weights the wheel much better and it keeps the wheel spinning. Since Super Sprint is played by spinning the wheel fast it keeps the wheel momentum up and makes for a more predictable and comfortable playing experience. You may find that you need to replace some of your original plastic steering wheel inserts anyways as they may be damaged. I would do it regardless as this makes for better gameplay. It also makes the game feel of a higher quality. I beleive the Championship Sprint cabs all shipped with the metal steering wheel inserts. Also, if you have children playing this game it wont make it any harder for them to spin the wheel, it actually makes it easier. A properly operating, cleaned, checked and very lightly lubed(with WD40 or some similar very light oil) rebuilt wheel should be balanced to where all you need is your thumb and index finger to spin it good. Like I said, the heavier metal insert keeps the wheels momentum up. You actually use more effort trying to keep the plastic insert wheels spinning as you have to keep spinning them more. The plastic insert wheels lose momentum sooner. Its not really a huge, massive difference but if you have played both types of wheels then you would prefer to use the metal inserts.
It makes a difference if you want your game experience to be the best it can.
Hope this helps. If you restore and maintain your game like it should be then it will limit your potential frustration with the game and make enjoying it like it should. Super Sprint is a great game to have around, as long as it is properly running. Its a great game because it appeals to almost anyone. Most people love driving games and it is a good game to have at parties and around your wife and kids. In other words, if you are married it can make having a game like a Super Sprint sitting around more accepting of the hobby as everyone can get into it. It and maybe a nice Ms Pac upright for the wife as well.

. That is part of the big secret of arcade collecting, getting games that everyone likes to play or ones that the BOSS might like to play.
