The original monitors for most machines from the '80s had light gray screens. Sometime in the late '80s, screens that were a much darker shade of gray became common in TVs, and new arcade monitors (such as the Happ Vision Pro) have the darker gray screens as well.

How do the newer dark gray screen monitors look when displaying the game behind the factory-tinted Plexiglas of e.g., a Missile Command or Punch-Out?

I do not think there is any brightness difference. I believe the tinted overlays were there to hide the screen burn that they knew would occur.
