I have on the chassis

No Letter on the chassis here
S

1) What does the E and S Stand for on the chassis?

Now...

The pacman wire harness has
-----
White
Yellow
Black
Blue
Green
Red

1) How does the above example relate to the pac harness?

The plug would be on straight in the examples above....

Ah the e is for earth meaning the black wire from the pac power supply would be correct.

Now what the heck does S stand for on the chassis and how does that relate to the yellow wire on the pac harness?

I feel a little more comfortable now cutting the monitor plug from the pac harness and reversing all the wires.
 
Yep the white would be horizontal sync and the yellow would be for vertical sync off the pac harness.

R red
G green
B blue
E black = (earth/ground)
S yellow = (+ vertical sync) This slot was left blank on the chassis
S white = (+ horizontal sync)

Switched the plug and it fired right up.

well, if we want to get technical, you shouldn't have any "red green blue black yellow white" coming from a pac-man.

The wire colors for the signals should be:

red - red/white
green - white/brown
blue - yellow/black
ground - green/red
sync - orange/red

If you are using a JAMMA harness, then you'd have the other colors, and should only hook up the white wire to the sync, and not use the yellow wire at all...
