I gotta disagree with so many on this list.
Marble Madness-it takes like 6-9 minutes to beat this game. After that do you pop in a quarter and do it again? I love it don't get me wrong but not a lot to replay there in my book.
Mortal Kombat II-Has the worst AI in the series. Half of the game is spent having the computer walk up and throw you from foot sweep distance. Playing against Kitana/Mileena you lose to German Suplexes and hop kicks. The game is largely just jump kick back up jump kick back up jump kick back up. With another it is great, but solo this is the WORST in the series for replayability.

For me my top Solo games:
Golden Tee Complete-I have played this game more then anything else (its various versions) even though I grew up in arcades I spent way too much time in bars. And after I got my giant version of this game I play it probably 3 times a week after close by myself at least a game, with friends...MANY games. And freeplay doesn't hurt it at all, as long as you don't start using mulligans. Never gets the credit it deserves.
Crystal Castles-I could play this game all night. I love this game, it takes concentration skill and is fun in a cartoony way.
Tempest-Another games I could play all night. Hard, takes skill, the game doesn't get boring, fast paced.
Road Show-My pinball entry. It gives you different tasks based on cities, you can follow different paths each time. A lot going on in the game. I played this every night for about a year at a local bar. When you get good the game really opens up for you.
Die Hard arcade- Why I have no idea, whenever I see it I MUST put quarters into this game. Even though I have beat it on 1 credit many times over I still get a kick out of this game. And it is fun to try new things with it, the vast weapons and moves you can do make it one of the best beat em ups of all time. Most beat em ups suck for replay, this one doesn't at all.
Point Blank-To me the end all be all of shooting games. None of this movie style crap where once you learn the pattern that is it like Area 51. Ever changes, Very challenging, and a great high score mechanic. The best shooter ever period!
Capcom Bowling-Simple, easy, fun with the cartoon interludes. This game set the standard for bowling games to come.
Xmen vs SF-For solo game play this has to be my favorite Fighter. It is fun, interesting characters and the tag off feature and team combos made it pretty cool back then. Apocalypse was a pretty decent boss character, unique for the time.
My Multi-Person List, games are always better with friends-
NBA Jam-Back and forth, trash talking, up to 4 people. Provides the nostalgia as you go back to when basketball was fun and watchable, and not just a bunch of overpaid, flopping, garbage thugs. Players then were better, the game wasn't completely fixed by the refs, and lastly "Boooom shaka laka"!
Mortal Kombat-My group of friends grew up on this. I am the king of Mortal Kombat, I rarely get competition, but get my cousin and some friends around and this will get played for 10 hours.

Primal rage-Again see above
Warlords-The ultimate party game. When you have the last two people with just a couple of blocks left it gets intense, this is a fun game even for spectators.
Joust-play cooperative or... "3,000 points is 3,000 points"
Cruisin World-Fun driver game that doesn't cheat too badly, some neat tricks add to it.
