I am trying to wire a MK from scratch. In the picture there are three plugs, it is the middle one that I have questions about. There are four pins in that plug and one wire. I believe that is another +5v input but cannot be sure. Does anyone know what that plug is and if it is +5v which pin of the four is it?

Most of these connections with the additional +5V are not necessary to wire up.
I have an NBA Jam and a Smash TV with similar connections. I believe they are used for additions to the game in the future. (It refers to these on the wiring diagrams as "Future Use")
But I believe you wouldn't have to wire this up unless you wanted to have the harness as close to the original as possible.

I have several of these boards, a couple NIB, and all show nothing on the test rig. There are two LEDs on the board and only one lights up.

Most of these usually connect directly to the motherboard and usually end at or near the coin door.
I think it is would have been used for a bill acceptor or an additional coin door.

You'll need the Jamma harness, the interlinking cable connecting the Main board to the sound board (this gives the sound board the correct power and the speaker/sound pot connections), and I believe that Mortal Kombat did require an additional harness (shown in you picture of the harness on the bottom right of your photo) to add the additional buttons.
Anyone else want to chime in to confirm that.

the pic is not of my boards but one i found with the correct plug for illistration purposes. My question is what plugs beside the jamma plug and the sound board harness do i need to test this board? Every similar board shows nothing when using just the jamma connector and sound board & harness.

correct :D

so the only thing needed to make these work is just the jamma harness.

To get a picture on the screen and play the game, correct. If you want sound, then you need to connect the sound board with it's harness. But the main board alone will display and play by itself, with only the JAMMA connected.

I use a Mortal Kombat board on my test bench to generate patterns for aligning monitors. Just the bare game board, nothing else.
