It'd be quite straightforward to work out which pins the video and audio signals were on with a scope. Then it's just a matter of shorting the other pins to ground to work out the controls.

Unfortunately it looks like these boards need quite a bit of work before they get to that stage. Not much point worrying about hooking them up when they aren't even running.
