So I ended up getting two pirate ship games and between the both of them I think I have all of the artwork for the control panel, sideart, Marquee etc. I was thinking about having them scanned because the machine that's in worse shape actually has the better side art.

I would like to do this not only for myself but anybody else who may need to have it now or down the road. I'm wondering what would be the best method to go about reproducing the artwork since I can't find it online or anywhere else. I know firms like Phoenix Arcade can't really do this since their silkscreen people, and I was told I would have to have an order of 50 to start. How do I take a nice high resolution scan? Some of the artwork is starting to curl and/or peel. Fornow, they're in pretty good condition, however, in a few years I don't see it getting any better. Any thoughts or suggestions would be totally awesome thanks :)

I really don't want to have a poor scan most especially one done with cheap materials that won't look good and be of poor quality.

Well done for making the effort - there is a lot of artwork that is lost to history. (Thinking aloud, Konami Aliens & Mega Zone CPO...)
There's a thread on the best scanner to use somewhere on the forum. You may be able to just tip it on its side and work a flatbed around on top, and stitch it together.
If you have NOS stuff you can take it in to your local office warehouse type place, most of them can do large format scanning.
