Does it convert to anything easily?

There were 2 different cabinet versions used for KC - one early and one later.

The early versions of the cabinet had Asahi Seiko style coin mechs, and the change door was smaller. The control panel also had smaller P1 and P2 start buttons, and the joysticks were different.

The later version of the cab used a standard over/under coin door arrangement, and the P1 and P2 start buttons are now standard size. The dedicated joysticks are black balltop 8-way joys with leaf switches. KC is the only game I've ever seen these joysticks used on.

Yep, I recall reading in an old Playmeter that initial KC cabinets were built in Japan by Data East while Dynamo ramped up to build the domestic USA machines for Data East. Hence the wood/coin door/button differences.
 
That cabinet was also used for dedicated Commando, Kung-Fu Master, Ring King and Shootout.

Kits were offered to convert Karate Champ to several other games, including Kid Niki, and those listed above. I think they all required a new control panel.

Karnov was a slightly different style cabinet.
