The only problem with that is the cabinet is wired to use the
audio amp built into the EZ-20. You would need to rewire the
sound portion of the harness the make it work.

Yes, that's what a few of us have been discussing and apparently the only person who has made anything to do this is Mark Spaeth. In other words, it's not readily available like the Nintendo to JAMMA adapter. Haha.
