Are these useful for much beyond directly debugging the CPU? It's no Fluke 9010. I don't think it lets me look at everything attached to the CPU like the buses.

I have two here. One for a Z80 and another from ZAX that does 8086/8088. No software. Just plug a laptop in and you control it through HyperTerminal.
 
Control through HyperTerminal? That's got to be a really old emulator. Without the ability to load source files and even a rudimentary GUI it won't be very useful. A more current one with those features can extremely useful though. You can write small snippets of code to do rom/ram checks or read/write I/O port. You could everything a 9010 does and more.
