I know there's a database for Atari games and I believe it was put together by KLOV member AtariScott since he got a lot of different things from Atari when they closed down.
 
There are a couple of disparate lists for certain vendors, like Atari. Usually, production numbers are a source of great debate. Many companies - like Williams (Defender) - didn't release anything official to the public.

We have a list here of lowest/highest serial numbers to try and figure out production numbers on certain games; it's not an exact science by any means. But it's something.

To answer your question, here's what I know about a few of my machines:

Missile Command cabaret: 1500
Robotron cabaret: 500 (long-accepted estimate, but uncertain)
Food Fight cocktail: around 100
Bubbles cabaret: haven't seen a guess
Galaxian "type II" cabaret: no idea on production; at least 3 known to exist today.
