Hooking PS3/Xbox 360 To A Cab

I know there are some MAME or old MAME people here so I figured I would ask. I am getting some Sega New Astro cabs soon and was wondering what would be needed to hook a PS3, etc. to the cab? I know I need to get some boards to hook up the controls and such, but wasn't sure what would be needed to hook it up to the monitor. The monitor will be able to do standard and medium res, so not sure if that will be a problem or not. I would like to get a high res monitor and may get a cab that supports high res soon, but for now I don't have access to a high res monitor.

This isn't going to be permanent but will be used for SFIV and such, and maybe some shooters for the 360 on occasion. Other then that the cab will stay a JAMMA cab.

I have an adaptor that allows you to connect RCA to Jamma. Basicly, you connect the RCA cables, tweak the pots to sync up the picture and play.

It came from Lupine systems, I can't access their page from work so I can't show the exact one.
