Help me get started with repairing my Donkey Kongs?

do the stand-up first definitely (seems like a fairly easy fix compared to the cocktail).

HAA HAA! You know it! At least I have some cash left over in the Galaga coinbox piggy bank to fund the other repairs. The Galaxian might end up being just white for a while.
 
side art is a major expense, i still have yet to strip both my cabs (i don't trust the weather and citristrip). I say buy as many of the small things you can that will keep you busy for a while, worry about the big stuff like art and replacement monitors ect after.

Have you checked the voltages and the wiring for loose connections/corrosion/breaks ect...? that's where i would start.

negative, I've been subscribed to your youtube page since the day you linked it to me (same day you subscribed to mine). I've really gotta start recording some of the stuff i do and upload it.

First place to pretty much always start is the power supply. Check the voltages (on the PCB, not the connector or PS itself) and make sure all your voltages are present and close to what they should be.

After that, you will need a logic probe to start looking for the problems.

Since you have two Donkey Kongs with issues, you're probably better off creating separate threads for each one.

Yah I am going to focus on the Cabaret first, also I coined it up and it rus very fast and the sound is all distorted and clipped, as if the crystal is the wrong speed.
