has anyone replaced video wires with mini shielded coax?

I need to replace the video signal wires in 2 cabinets and was wondering if I should replace with mini coax? I know most of the time they are not shielded and are short but if I have them will they offer better interference rejection?

I assume that I would ground on the PCB side to system ground for the shields and not have the shield grounded on the monitor input end. Can anyone confirm?

I wouldn't replace existing wiring -- it's pointless for such a short run and such a wide bandwidth. Enough EMI to actually visibly influence the picture would also cause problems inside the game PCB, which would be far more noticeable. You probably have a monitor issue. However, if you don't already have a video hookup and have the mini-coax on hand...

Don't connect the shield to the monitor OR the game board -- go straight to earth. Or, since it doesn't matter, you could use the shield as video ground.
 
I did replace RGB cables on a pit fighter cab once because I had white diagonal lines across the screen

I used awesome 8mm R G & B shielded cables and earthed the braid, and it worked

Boy did it look ugly, but I was happy
