I hear with Atari cabs that have been painted over you can take it off and show the previous art underneath. Can I do that with an original Gyruss machine so I can hopefully restore it to its previous glory?

The Gyruss cabs I've seen are stencil painted with oil base paints. Atari cabs have full side vinyl side art. To answer your question, I think it depends on what kind of paint was used to paint over the side art. If its latex paint than you can remove it with Citristrip without damaging the underlying art. If it's oil base (rattle can) paint, you may be screwed and have to strip it all off and repaint and re-stencil the sides.

The painted sideart on Gyruss is not very durable. So regardless of what was used to paint over it, I bet you're going to lose a lot of it when stripping that top coat. And in all likelihood the sideart was pretty scratched up to begin with. What you're going to be left with will probably not look too pretty. But it may serve as a decent guide if/when you decide to repaint the art.
