So many monitor flow charts but nothing really overall to a whole game that I can find.

Are there any others, I know things can get complicated but if the "How to fix PCBs - A Beginners Guide" could be made into a simple flow chart that would be cool.

Just the very basic principles such as:

Voltages Good -> Re-seating chips fix? -> Test Mode Functional -> Image on Screen -> Plays Blind -> etc etc maybe leading to basic video issues and where they would fall in a circuit.
