For 2010, i'm toying with the idea of buying the innards of a game in the hopes of finding the cab down the road. Has anyone done this and if so how did it work out?

i usually do it simularly that way with beater c abs...

get em working, that way you can play em while you hunt for al the bits and pieces to make em look oretty again..

haveing a beautiful cab and bad boardset it just pure torture...

I've told the story several times, but the short story is I got all the pole 2 cockpit parts minus the pedals for free with the intention of scratch building the cab (I could use the original cab as reference). However, oregonarcade noticed a pole cockpit cab converted to a road riot 4wd so I picked that up to save me a lot of headache (though it's a bit beat).

Yep been their don't that. It depends on the game. Sometimes if you wait long enough you can find the game complete and it might even cost you less but when you build it one piece at a time (like the Johnny Cash song) you have so much fun and gain a wealth of experience and theirs the thrill of the hunt for parts. You just need the time and money to make it happen.
Did it with my Asteroids

I haven't gotten very far yet, but I bought a set of Space Lords boards and CPs off of Ebay recently. It's my intention to eventually build a single-position, smallish cabinet for these (I'm thinking box with CP on top, and LCD monitor on a pole sticking out of the top). I could get the machine (they come up from time to time), but the damn thing is so big (it's a double-wide cabinet, each side of which is wide enough for 2 people to stand at) that I can't justify the space needed.

i do this alot since its easier to reproduce a cabinet and art than it is to reproduce a board or control panel. i am piecing together an eyes right now, pepper II and inferno from parts

I did something similar to this.. I picked up a few Crossbow parts thinking I might have to build the cabinet. I did finally manage to track down a suitable cab. Telling yourself you are going to build the cabinet is often a lie. :) Some people actually build them, but I'm guessing those folks are in the minority of people who tell themselves this.

In general, I would not advise acquiring the guts without the cab all the time. Buying individual parts can get expensive, especially with shipping, etc. You can also end up with unneeded parts; i.e. when you finally pick up a project cab, it may have doubles of the parts that you already paid an arm and a leg for.

I'd save this for rare/semi rare keeper cabinets that you are having a hard time finding. Of course, if parts happen to fall into your lap for cheap, that's another story.
