I just picked up a Donkey Kong cocktail cabinet. I can't wait to play it, but at the moment, that's not really a possibility. for player 1, the sprites for mario, DK, pauline, the barrels, the oil drum, the bonuses and the fireballs are all missing, though mario can move and jump and he's eventually killed by a barrel. With Player 2, you can see DK ascend, but he chops in half along with pauline. Mario starts halfway up the ladder but appears to function as though he's on the bottom row. What would do this, and how can I fix it?

I don't have a clue but video of this issue will help others help you much quicker, just a FYI

I would suggest getting a Braze HSS kit. In addition to being a "ROM Saver", which means it bypasses the ROMs on the PCB, it also has a really cool self-test on boot-up that checks the RAMs. I've tracked down a number of sprite problems that way. You also end up with a high score save kit.

The first thing I would check would be the RAMs, then the ROMs

Beyond that, as has been suggested, a video of the issue would be a big help.

Also, I assume you've done the usual stuff: reseat the ROMs, clean the connectors, etc?

I can't really upload a video, but here's a pair of pictures, first player 1's screen, then player 2's. A cap kit fixed all the monitor issues, but the sprite errors are still there.

You should watch One Circuit's videos. Adam's stuff is great and very Nintendo-centric. I'm pretty certain you'll find avenues to check watching his stuff. Heck he has likely filmed fixing exactly your issue.

Reseating the Roms and verifying voltages is step 1. I think your problem may go beyond that but I'd rule out the simple things first. What is your 5v measuring at?

Looks to be on the video pcb is where I'd start. The 7C-7E roms and the logic that controls it.

If you have ability to compare your existing roms or not.

Just a suggestion.

Yeah, I lack both the tools and know-how to do any of this stuff. Looks like I'll be sending it in to mike's arcade for repairs, maybe.

I sent mine to mike and for the price he charges it makes it worth it. He does a good job.
