And you came across 2 cocktails of DKJR, WOULD you restore 1 of them and sell it (I know this title is tough to play sitting down because the controls are awkward as F, or do you keep the Sanyo 20ez, PCB (WORKING OF COURSE) power supply, etc.. for spare parts. These things are getting harder to find and expensive.

This would be the first time that I would restore a game so I'm tempted to keep and flip, but it'd also be great to have some spare parts.

Could I get more $$$ to part it out?
But I also hate to see any arcades (even cocktails) disappear.

WHAT WOULD YOU DO?
I would make the best single dk jr cocktail I could using parts from both. But I would keep the major components together so serial numbers would match if possible. That would be my keeper. The second cocktail I would put into storage, or sell or trade or keep. But I would not rape it for parts.
 
I would keep the game, wait I already have a dedicated DKjr a Popeye and a DK3 cocktail table, keep in mind the monitor in the cocktail tables are a bit smaller than the uprights there 18" there 18-Z2AB, you can throw a DK board or a DK3 board and play it
 
I'm leaning towards building one nice DKJR cocktail and put it up for sale. I'm not even the biggest fan of cocktails, (however I love my asteroids and centipede) but there will always be a new collector out there that will be able to afford a less desirable tabletop vs an upright.
