I have a Defender cabinet that has some water damage. I'm replacing the bottom, kick panel, back, and about 12" of the sides. I have a plate joiner on the way so I'll use that to join the replacement pieces for the sides. I'm not sure the best way to clamp those up while they dry. I don't have a clamp long enough to reach the top. Thinking about temporarily screwing a cleat to the inside to clamp to. Also is BC plywood a suitable replacement or do I need to jump up to birch instead? Any helpful hints or insight would be appreciated.

Your cleat plan sounds right by me. I'd probably also reinforce it from the inside with some overlapping ply, myself.

For longer clamps, it's hard to beat pipe clamps. Get a few sets of Bessey, Jorgensen, etc and then you simply buy longer lengths of pipe as needed. Just make sure to use black pipe, and not galvanized so the heads slide properly. Dedicated beam clamps are way more expensive and probably not called for unless you do a ton of woodworking.
