I recently sanded, primed, sanded again, then spayed the top and back of a cab I'm currently restoring. The back came out fine, but the top has this weird coarse surface going on with it. It was perfectly smooth when I sprayed it. I also wiped it down with a microfiber directly before spraying. Any clue what could've caused this?

Could it be dirt in the air settling on the paint? I am in Arizona and dirt is everywhere. But kind of odd cause the back does not have this phenomenon going on.

Its a thing. Wet sand the now painted cabinet by hand (I know sorry) with a high grit. It doesn't take much. Just knock down the roughness. Clean it off well, then spray one more time and it'll be perfect.

It could be as simple as a paint blob on your spray nozzle for that part. It would provide a rougher surface.

Some cans now have a "spray selector" so you can get a specific finish. I haven't used them yet - it seems like another "one off" innovation that may help people. I'm not sure it is worth the extra $ for a single use spray can.

Did you paint outside? Was the top of the cabinet in direct sunlight?

Even the slightest breeze or direct sunlight can cause the paint particles in the air to dry almost instantly leaving a rough surface.
