I searched a bit and there is lots of info on cleaning metal CP's but not wood...

For metal, I just throw mine on the grill for an hour, drink a beer and the job is done.

That wont work well for wood.

I pulled the old CPO off my DK CP and there is still adhesive here and there. I am not sure if I should just leave it and put a new CP over it or try to get it off? The other issue is that there seems to be a black (almost construction paper) like surface on the CP under the covering the entire thing...Perhaps its there originally? Not sure if I should be trying to remove that...

to me a DK cp in not like say a joust cp that is wood. For the DK remove whatever cpo is on it. Weather it be an adhesive backed sticker type or an original Nintendo plexi style. As for the plexi style this should come right off and leave minimal if any residue other than dirt. Although I have seen scenarios where the art has come off the plexi and stuck to the cp. Usually a cleaner like simple green, windex, soap and water or goo gone will clean this up pretty easily as the dirt or paint from the cpo is not actually glued to the cp. So a little elbow grease and a cleaner usually works..

If someone has put a stick on cpo on your panel then the best method for a wood panel will be a heat gun ans a scraper. Once the cpo is removed there will be residue from the old glue. Once again a cleaner and elbow grease is the best answer here. Some folks really like brake cleaner to remove old adhesive. I've never tried it but heard it works great. As for the black construction paper you describe, it could be the original black laminate on the cp. If it looks ok and is still in place I would leave it. If it looks ugly and is coming off you may want to sand, bondo if needed, prime and paint the cpo.

Just FYI remember I mentioned a joust cp being different than a DK? If this were a Joust cp I would remove the cpo as described above than just take a sander to it and sand off the residue. Then bondo, prime paint ect.

Everything seems wrong in the above paragraph. Original DK CP's are made from plywood with a black formica-type laminate glued to the top. Over this sits a screened plexi overlay that is bolted to the CP. The instruction card is then taped to the underside of the plexi CP. There should be no construction paper or adhesive residue anywhere. I don't know what you have, but it does not sound anything like a DK CP.

It was a conversion...

Well since it's wood you don't want anything that's going to soak in, and stay there only to start seeping back out and ruin your new art. I would use Acetone, or Lacquer thinner. The black paper like stuff sounds like some of the old backing paper they use to use for artwork, it's more like a tar like substance. Wear gloves when using the thinner, or acetone, peel, and wipe as much of it off as you can, then sand smooth.
