Tron and Star Wars probably rank up there for the best looking cabs.
Joust has always been one of my favorites and the gameplay is great too.
 
Anything Atari, pre '84. Someone posted a pic of Sprint2 the other day that almost brought me to tears, such was the beauty.

Golden Ax looks like the back flap of of a metalhead's Trapper Keeper, circa 1987. IMHO, of course. :)
 
With Warrior it was more the overall presentation than any one specific bit of art. Similar to Tron, it had a lot going on that made it so cool to see working in person. Here's some more pics but it's hard to capture:

I've always loved the art on Gravitar, and recently started liking the gameplay. Not the exact sideart, but you get an idea:

I think games ( and pinball machines) are lacking the depth of art that they used to :(

I'm gonna have to agree with Space Duel, and Gravitar. They both have awesome art. I think most Atari games of that era had awesome artwork. In fact I can't really think of an Atari Vector that had crap art. Hell, even a majority of their rasters had awesome art. Millipede, Crystal Castles. Food Fight, Dig Dug, even Kangaroo had good art.
 
As much as I love Nintendo, it was Atari all the way.

Star Wars
Food Fight

I think Burgertime, Omega Race, and Zoo Keeper are the only other non-Atari, I'd list off the top of my head.

PS I had to it's so wrong! I have a cab in the shop that is waiting it's turn and that's the damn Side art I see everytime come in or leave. Maybe I should move it.
