Attempting to restore my first game....Daytona USA

Welp...this is going to be my first attempt at an arcade restoration. Bought some Daytona USA machines this past weekend and my ultimate goal is to make them fully functional and cosmetically wise, excellent. (don't need actual SEGA parts...aftermarket is just fine.) Five machines total. One set of twins, and three single cab units. I plan on restoring two of the single cabs at the same time first.

I have not dug into the machines yet, however the two single cabs that I'm going to start on both work. On one of them, the break pedal does not work. Hopefully just a wire or something like that. On the other, the steering wheel needs adjustment, the shifter 3rd gear is not registering. These two are mostly going to just need cosmetics I believe.

The twin units, the monitors are missing the chassis, but I don't care about that. I'm going to slap LCD's in them and order the conversion parts from Nixs. Other then that, I have no idea what those are going to need. Hopefully, not much. They are in better physical condition then the two single cabs I'm digging into first.

So here it its my friends. I've never worked on an arcade, other then replace a monitor on my Aliens Vs. Predator machine. These Daytonas seem like they are a lot more involved then a standard upright cab. I'm a little worried, (mostly that they are going to cost a fortune) but at the same time excited to really get into it. I'm hoping the mechanical problems with my machines can be fixed by me in house and not need new parts. I know parts for Daytonas are pretty plentiful compared to other games, however, I'm scared that I'm going to need a part that just is not available.

As far as side art goes...I've been searching the web for side art and cannot find any. I've found shifters, steering wheels, buttons, circuit boards, seats and a bunch of other stuff that seems to always be on the market, but not side art. Anyone know where I could score some at?

MY REAL REASON FOR POSTING, HOWEVER, IS THIS.............................
All you Daytona buffs out there in arcade land...Is there anything I should look for as far as common problems on these things? I read somewhere the monitors are WG U5000 screens and they are prone to failure a lot. Thats ok, because Im going to LCD all of them eventually. What should I look out for? How should I go about things when sourcing parts? ANY ADVICE IS GREATLY APPRECIATED!!! This is going to be my FIRST attempt to redo a complete game..er...5 complete games (haha!), so ANY ADVICE on restoring games would be just fine! SCHOOL ME, FELLAS!!!

(BTW..I was an automotive tech and graduate of WyoTech. I've been working on cars for a long time..what I'm getting at is, I'm mechanically inclined and understand how to solder, wire up stuff, and understand and fix mechanical components. I know arcades are a new ballgame, but what I'm trying to say that I'm into this kind of stuff.)
