Not sure if that's a wise choice. Using a rigorously tested factory setup is ideal. Any modification using aftermarket parts, even for MAME could end up MAIMING someone. It is best to use the original hardware/software combination. We take quality control seriously. No one wants chaffing from joysticks, shifters, arms or any other player input devices. Nor any stutters for the poorly emulated software.
We are however in talks with the 1Up people to make a 2 player version that will be economically priced even for the part-time hobbyist

You're right, the experience is probably not the same with keyboard controls.
