19" med res vs standard res

What makes a 19 inch Wells Gardner medium res different than a standard res chassis? What is the difference between a 19 inch medium res tube and a standard res tube? I have a 19 inch K7000 medium res out of a Toobin that has a shorted tube. Can I use this chassis on any other 19" standard res tube or will it make a regular tube into a medium res tube?

The dot pitch is different between a std res tube and a med res. I think most of the med res tubes from the older arcade chassis were made by Rauland, but perhaps there were other manufacturers that they used. Anyway, you can do the yoke swap and make it work with a std res tube but you cannot get the same resolution as the tubes are fundamentally different. I'm no expert in this but has been explained to me and you can actually look closely at the two tubes and see the difference with your eye.

You can look up the difference between standard res and medium res with a little searching (Example Here).

Based on what you've said here, it sounds like you need to swap out the tube as mentioned above...that would include finding a compatible CRT and also swapping the deflection yoke from your current monitor over to that tube.

While there are differences in dot pitch on tubes, I can confirm from multiple experiences that have been documented elsewhere on KLOV that you can absolutely put a standard tube onto a medium resolution monitor if you find a compatible one and swap the yoke over. (Example Here)

I think the zenomorp video that was mentioned does just that, and is loaded with good info and procedures, so that's a great place to start.
