I’m my experience Vinegar doesn’t pull off any plating, but often the rust destroyed the plating before I used the Vinegar (same with citric acid). Unless I’m misremembering, the plating was only missing in the spots that were rusted when I’ve done it.
Add citric acid powder to the list of effective rust removers. Totally safe, non-toxic (it’s used for cooking), cheap, can buy off amazon easier, and can be mixed stronger if needed. In an effort to de-rust a bike frame an all its parts I used it on everything rusty I could find in the garage...
