Aha! Thank you! So, it seems the sense circuit is designed to automagically adjust the voltage of the power supply if it starts to drift. I connected sense specific wiring to the power supply along with the others and set voltage to 5.05. Turned the cabinet on and it fired right up! Well...

Oh man. I just found another thread on KLOV that showed a clear picture of the original power supply. Same form factor as modern switchers, but it has terminals for +sense and -sense. I'm 100% sure that the supply I removed from the machine didn't have that. So, the question still on the...
